iPad As....

I have an iPad.  I find I use it more and more each and every day.  My entire family does in fact!

Love my waffle maker!


On the weekend, I like having the time to make waffles for my family.  The entire family enjoys them as much as like making them!  They also make a great supper on busy week nights. 

Waffle Batter Ingredients:
2 eggs, separated
1 1/2 cups milk
1/2 cup melted butter
 2 cups sifted all-purpose flour
 2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar

Preparation:
In a small mixing bowl, beat egg whites until stiff; set aside. Beat egg yolks, milk and melted butter.  Sift dry ingredients together; add egg yolk mixture and mix until smooth.  Gently fold in beaten egg whites. Bake in a hot waffle iron.
Makes about 6 waffles.
I add fruit (frozen blueberries, thin banana slices, raspberries) to the batter before I fold in the egg whites for an extra treat.

Meatball Appetizers

Need a quick and easy appetizer for a gathering?  Toss the following ingredients into a crock, set crock pot on low, and you are set!


2 pounds prepared meatballs
1 (16 oz) bottle catalina dressing
1 cup orange marmalade
3 Tablespoons Worcestershire sauce
1/2 teaspoon red pepper flakes

Chicken Enchilladas


This makes a nice supper!  Add a side salad and enjoy!

Ingredients:
8 corn tortillas
3 cups shredded cooked chicken (skinless, white meat)
1 cup black beans
1 cup sweet corn
2 cup medium or hot salsa
2 cup plain low fat yogurt
1 cup reduced fat sour cream
1 cup reduced fat shredded Jack cheese

Preheat oven to 350 degrees.  Spray a  9 by 13-inch baking dish with nonstick cooking spray. Warm tortillas according to instructions on package.
Combine shredded chicken with black beans and sweet corn.  Mix salsa, yogurt and sour cream.  Mix half the salsa mixture into the chicken mixture.  Blend well.
Divide chicken and sals mixture among the tortillas.  Carefully roll tortillas and place them seam down in the baking dish.  Spoon remaining salsa mixture over the tortillas and top with cheese.  Cover with foil and bake for 30 minutes.

Valentine's Day and Spring Craft

I was looking for a cute craft idea for February and I came across this adorable idea on 

Scrumdillydo blog:  Pretty Valentine Trees



These trees are fun and easy to make, and add a nice splash of color for February.  As we worked on this craft, my teacher brain was working overtime!  For a spring craft, make the tree trunk the same way as the Valentine Trees.  Use a q-tip to create green leaves (in various shades of green) and pink blossoms.  Finally, use a cotton ball to create a fluffy little baby bird on the limbs (two bounces with the cotton ball to make a body and head).  Finally, use a toothpick to paint eyes and a beak on the baby bird.  These great work of art will brighten up any spring day!

Chicken and Rice Hotdish



When we purchase chicken, we buy the large family pack of chicken breasts.  I bake it all at once to have on hand for salads and hot dishes.  This is a quick and easy dish.

Ingredients:
1 bunch of fresh broccoli, steamed
3 cups diced cooked chicken
1 medium onion, chopped and sautéed
1 (8 oz) can water chestnuts, drained and chopped
1 can cream of celery soup
1 cup mayonnaise
1 box long-grain and wild rice, cooked according to package
1 cup grated sharp Cheddar
Pinch salt

Preheat oven to 350 degrees.  Mix all ingredients together and pour into a greased 3-quart baking dish.  Bake for 20 to 25 minutes or until bubbly.

There's an App for That!


iPad, iPod, iPhone... Can't leave home without them!
My new work out partner is my iPhone and my favorite apps are my running apps!  The computerized trainer tells me when to walk and when to run, turns the volume of my music up and down, and congratulates me on completing my work-out!  Great personal trainer for less than two dollars!
I can't wait to see what else I can find to simplify my life!
