On a cold and rainy afternoon, my thoughts always turn to soup. Meatball Stew is a hearty, warm soup that even kids enjoy! Super simple, especially if you use your favorite store bought meatballs!
2 cans or 28 ounces of beef broth
2 cans condensed golden mushroom soup, undiluted
4 medium potatoes, peeled and quartered
4 medium carrots, cut into chunks
1 medium onion, chopped
24 ounces prepared meatballs
Just place all of the ingredients in a crockpot and cook for 8 hours on low. Enjoy!

Hot Sausage Dip
1 package (16 oz.) Jimmy Dean Hot Sausage
1 large onion chopped
1 large red bell pepper, chopped
1-2 jalapeno peppers, seeded, chopped (can use canned)
2 pkgs. (8 ounces each) cream cheese, cubed
1 large tomato, seeded, chopped
⅓ cup chopped fresh cilantro
Tortilla chips

Cook sausage, onion, red pepper and jalapeno peppers in large skillet over medium-high heat 8-10 minutes or until sausage is thoroughly cooked and vegetables are crisp-tender, stirring frequently. Drain sausage mixture; return to skillet.
Reduce heat to medium; stir in cream cheese. Cook and stir 5-8 minutes or until cream cheese is completely melted and mixture is well blended. Stir in tomato and cilantro; cook and stir 3-5 minutes or until thoroughly heated.
Serve with chips.

Egg Bake
This is my "go-to" recipe for company, Sundays, family celebrations, and holiday gatherings. Nothing easier and more satisfying than a hearty egg bake! Add a bowl of fresh fruit, berries, and bread, you have an extremely nice table of food. No one needs to know just how easy this dish is!

1 pound Jimmy Dean Hot Sausge, cooked and crumbled
2 cups shredded cheddar cheese, divided
1/2 teaspoon salt
12 eggs
2 cups milk
1 cup chopped onion
1 cup green pepper, optional
In a large bowl, combine the hash browns, sausage, 1 cup cheese and salt. Spoon into a greased 9x13 inch pan. In another bowl, whisk eggs and milk together; pour over the hash brown mixture. Bake uncovered, at 350º for 50 minutes. Sprinkle with remaining cheese and bake until melted.

Raspberry Chicken
2/3 cup bread crumbs
1/4 cup minced parsley
1/4 tsp salt
fresh pepper to taste
1/3 cup olive oil
1 clove garlic
8 chicken breasts
10 oz raspberry salsa
1 1/2 cup grated monterey jack cheese
Blend bread crumbs, parsley, garlic, salt and pepper. Brush chicken with olive oil and roll in bread crumb mixture. Place in greased 9x13 pan. Bake uncovered at 350º for 25 minutes. Pour salsa over chicken and sprinkle with cheese. Bake for 10 more minutes and serve.

A Simple Salsa
Simple Salsa:
2 cans of Mexi-corn (drained)
1 can of black beans (rinsed)
1 small can of sliced black olives
1 finely chopped jalapeno, remove seeds
1/2 red onion, chopped
cilantro, chopped
Spicy Ranch Dressing
2 cans of Mexi-corn (drained)

Spicy Ranch Dressing
Mix ingredients together. Add as much cilantro as you like and enough Ranch dressing to coat the ingredients.
